This dish was inspired by a meal I had when Steve and I traveled to Boulder, CO recently. We ate dinner at a fun little restaurant, and I ordered a lemon thyme chicken dish that is loosely translated here.
This dish has a delicious sauce that can be made with fresh or canned tomatoes. It is served over a bed of rice and garnished with sauteed brussels sprouts. You could easily swap out the pork for a chicken or turkey breast.
I am loving these great bowls I recently found…also inspired by an evening out with my husband. Although, I can’t recall where I first saw them. If you like to eat salads and dishes that have somewhat runny sauces, you’ll love these dishes. I found them at TJ Maxx…of course, but not locally. Also in CO. It is basically a bowl the size of a dinner plate with very short sides. Keeps all the food in place with no issues of it falling off the plate. This girl likes a big salad, and I hate when it gets pushed off the sides of the plate. Anyway, just a side note for those that like to serve your food in fun ways.
